Will the Meal Ticket Replace the Restaurant Reservation?

Starting next spring, two of Thomas Keller’s eateries, Per Se and The French Laundry, are changing the way they do business. They’re joining the growing rank of high-end restaurants using a new reservation system, Tock, that requires guests to pay for their tasting menu at the time of booking. It’s basically buying a dinner ticket!

If there was ever a way to discourage diners from skipping out on a dinner reservation, this is certainly a good way to do it.
