What’s the number one sign of a good burrito? According to Buzzfeed, it’s the weight. The best burritos should be overstuffed with fillings and bursting at the seams. Marinate Your Chicken in Soy Sauce, Sesame Oil & Hoisin
This recipe is a riff on Chinese bai qie ji, or poached chicken. The chicken is marinated in soy sauce, sesame oil, and hoisin for at least thirty minutes or overnight before being cooked on the stovetop. Throw in a scallion ginger sauce for good measure. I love the colors of the recipe – the bright red color with the scallion ginger sauce is dramatic enough for a dinner party, but also makes a great healthy weeknight meal. Just add some noodles or roasted veggies.

Do You Really Need to Use Oil When Roasting Vegetables?
Q: Recipes for roasted vegetables always say to coat the vegetables with oil before roasting. I usually skip this step and just put the diced-up veggies on a Silpat sheet. They always turn out fine and get nicely browned, so I’m just wondering what is the real purpose for tossing everything in oil before roasting? Skipping the oil at this stage makes cleanup a lot easier, and I just add butter or oil once the vegetable is on my plate.

This simple riff on a the classic spaghetti and meatballs is an easy meal you can make on any given weeknight. There’s a ton of flavor in the sausage meatballs, great texture with the orzo and sundried tomatoes, and some hearty greens to bind the whole thing together. Did You Know You Can Store Grated Ginger in the Freezer to Make It Last Longer?
I have a little ritual when I bring fresh ginger home from the market: peel and grate, then freeze. Not only is this a great way to keep ginger fresh longer, but it becomes incredibly easy to punch up a sauce, stir fry, or smoothie any time you want some gingery spice. To freeze ginger, first peel and mince, or grate it. Then spread or scoop the ginger onto a parchment-lined tray. I like making teaspoon-sized portions. Freeze until solid and transfer to an airtight container.

Before & After: A Dish Cupboard Makeover
I have a large dish cabinet that has taken on piles of prep bowls, odds-and-ends (like vitamins and water bottles!), and nice serving dishes that don’t see much use because they’re buried. This is just one of the cabinets in my kitchen that needs help. I’ve set out to pare down, categorize, shift to underused cabinets, and provide easy access to everything. Erratic piles, be gone!
