What’s the Best Packaging for Homemade Granola Bars?
Q: I recently tried to make pastel — a delicious but gooey mess. Parchment paper and wax paper both stuck too much and tore to pieces. I would love to make my own granola bars or fruit and nut bars, but would like to use honey instead of refined sugars to keep things more natural — a.k.a. keep it more sticky. Can I Use the Mother Found in My Balsamic Vinegar?
Q: A few years ago you covered a question about vinegar mothers. Well I’ve got a new spin on the question.My balsamic vinegar has grown a mother. Is there any way I can use it to make vinegar from wine? I know that balsamic is traditionally made from un-fermented pressed grapes carefully aged in barrels. Going through the process of boiling water and poaching tomatoes just to remove their skins has always felt labor-intensive and rather annoying to me. Happily, I recently learned that freezing tomatoes can accomplish the same end!This is yet another small yet mind-blowing tip from David Tanis and his book Heart of the Artichoke. He describes freezing bags of whole fresh tomatoes for quick tomato sauces and soups all year round, and actually prefers this to canning.

After playing around with various proportions in our juicer (you can use a blender or food processor, too), we settled on a 4:1 watermelon to strawberry ratio.

Help! Did I Ruin My Pizza Stone?
Q: I think I ruined my beloved pizza stone! HELP! Last week I made a summer strawberry and rhubarb pie and it overflowed onto my pizza stone. I was unable to scrape the hardened, burned-to-a crisp pie filling off the stone, so I soaked it in warm water and dishwasher powder (eep, I know! even as i was doing it, I was thinking this is a terrible idea — pizza stones are porous).Well not only is the black grime still there, but the stone is seeping out a white film of soap.

I like to let my fruit get really ripe before I eat it, perhaps because I like sweet things but also because I like intensely flavored things, too. This is a delicate endeavor as there is a fine line between ripe and rotting, and sometimes it only takes a slightly warmish afternoon in the kitchen to cross it. Waste Not! Refrigerator Jam From Leftover Pie Filling
We had a major pie-fest at our house over the weekend. Not only do I have enough pie for breakfast, lunch, and dinner this week, but I ended up with a few cups of leftover filling that just didn’t make it into a crust. The solution? Make jam!Normally, I’d just mix leftover fruit into my morning yogurt or spoon it over a bowl of ice cream. But pie fillings usually have a few tablespoons of flour or cornstarch to help them set during baking.
