Sorry, I don’t mean to interrupt whatever you were doing, but I have some extremely important news that I need to tell you about. After teasing it for months (years? decades?), you can now watch the very first episode of Alton Brown’s Good Eats: The Return on Food Network. I know. I KNOW!

So, if you’ve been following along on this wild journey, you might have thought that first episode of the revamped series wasn’t coming out until this Sunday. But Brown (and presumably the Food Network) decided to give us all a Monday blessing and leaked the first episode early. Brown announced the new video on his Facebook page.

The first episode is all about chicken Parm. Brown starts out by questioning the origin of the classic dish. “There’s literally no reference to it in Italian history,” he explains. Instead, Brown says the dish is actually very much American (and as you probably expect from the culinary icon, Brown goes deep here).

After talking history, Brown gets down to business with how to make a better chicken Parm. Brown says that the major pitfall of chicken Parm is making it just like eggplant Parm. To avoid this, he suggests you make a tomato sauce that’s more like a paste than a sauce, you make a crispier chicken, you use a blend of cheeses, and you limit the layers of the dish.

If this episode is any indication of what’s to come on the 15th season of this show, we’re all in for a ride. Just like old times, Brown blends humor with smarts so effortlessly, and somehow not-so-surprisingly you end up with the best version of your favorite recipe. Can’t wait for more!
