Avocado and eggs are a match made in heaven. You’ve probably had avocado toast with poached eggs on top, or scrambled egg tacos with guacamole, but these scrambled eggs served in avocado halves might just take the cake. I mean, look how cute they are!

The recipe for this scramble features butter, Canadian bacon, eggs, and white cheddar, but you should feel free to customize it. That’s the beauty of egg scrambles, right? They’re so versatile! If you don’t eat meat, just skip the Canadian bacon; if you’re trying to eat more veggies in the morning, throw in some baby spinach; if you love goat cheese, swap that in for the cheddar.

And sure, you could just slice up an avocado and serve it on the side of your egg scramble, but what’s the fun in that? By halving avocados (and removing the pits), you create little edible bowls that perfectly nestle your eggs.

This dish would certainly impress guests at your next brunch, but you could also just make it on a regular ol’ weekday morning for yourself or your family. With a breakfast this adorable and delicious, how could you not start your day off on the right foot?
