The contrast between the sweetness of the potato and the saltiness of the snack is pretty impossible not to love.

These air fryer sweet potato chips deliver everything you love about those deep-fried snacks, but require way less oil to make. That’s the beauty of the air fryer, after all — you get to skip the hassle and mess of heating a huge pot of oil on the stove — but your “fried” treat comes out equally as delicious.

And unlike a store-bought bag of potato chips, you get to customize the seasonings. Here, we’re using dried herbs and a pinch of cayenne for an earthy, slightly spicy snack.

Ingredients

  • 1

    medium sweet potato

  • 1 tablespoon

    canola oil

  • 1 teaspoon

    kosher salt

  • 3/4 teaspoon

    dried thyme leaves

  • 1/2 teaspoon

    freshly ground black pepper

  • 1/4 teaspoon

    paprika

  • Pinch cayenne pepper (optional)

  • Cooking spray

  1. Wash 1 sweet potato and dry well. Thinly slice 1/8-inch-thick with a knife or preferably on a mandoline. Place in a bowl, cover with cool water, and soak at room temperature for 20 minutes to remove the excess starch.

  2. Drain the slices and pat very dry with towels. Place in a large bowl, add 1 tablespoon canola oil, 1 teaspoon kosher salt, 3/4 teaspoon dried thyme leaves, 1/2 teaspoon black pepper, 1/4 teaspoon paprika, and a pinch cayenne pepper if using, and toss to combine.

  3. Lightly coat Instant Vortex Plus 7-in-1 Air Fryer Oven rotisserie basket with cooking spray. Air fry in batches: place a single layer of sweet potato slices in the rotisserie basket. Place the rotisserie basket in the air fryer and press rotate. Preheat the air fryer to 360ºF and set for 22 minutes. Air fry until the sweet potatoes are golden brown and the edges are crisp, 19 to 22 minutes.

  4. Transfer the chips to a paper towel-lined plate to cool completely, they will crisp as they cool. Repeat with air frying the remaining sweet potato slices.
