Add This One-Skillet Shrimp to Your Meal Plan

If you’re on the hunt for a new seafood recipe to add to your meal plan, look no further than this Greek-inspired shrimp. With barley, tomatoes, kale, and feta, this dinner delivers everything you want — all in one skillet.

The key to making this entire dish in one skillet is some strategic cooking and layering. First you sear the shrimp to give them a nice golden color (and set them aside), and then you sauté onion, garlic, tomatoes, and red pepper flakes (and set them aside). Next comes the kale (also set aside), followed by some white wine, pearl barley, cilantro, feta, and chicken stock. Then you add everything that was set aside back into the pan, top with more feta, and let it bake in the oven for about 10 minutes.

The result is perfectly cooked barley (you can sub other grains in here too!) with juicy shrimp and a flavorful broth. And the best part, of course, is that cleanup is a breeze! That’s the enduring appeal of a one-skillet meal, after all.
