This Gourmet Dressing Is So Tasty That It Has Me Craving (and Eating) More Salad

While I’m a bit of a health nut, I’ve never been a big fan of salads. Store-bought dressings have never done the trick for me, and after chopping veggies, I’m always in too much of a rush to blend up my own. However, that’s all changed since I discovered Acid League’s Toasted Thai Coconut Vinaigrette. Now I’m craving salads all.the.time.

Before, whenever I did eat salads, I loaded them with everything I could find in the fridge to help add flavor, but thanks to Acid League, I don’t need to scavenge anymore. This salad dressing complements any bowl of greens and brings out the best in even the most basic ingredients.

The Toasted Thai Coconut Vinaigrette will tickle every taste bud with everything from earthy umami and sweet and sour notes to a bit of spice, all wrapped up in a creamy (yet light) coconut flavor. Since falling in love with it, I’ve been hooked on making a large salad on Sundays to last me the entire week. I chop up a mix of cabbage, carrots, green onions, and cilantro, add some protein and slivered almonds for an extra crunch, and toss in this sumptuous dressing. Voila — my new favorite lunch! (Is it possible to be addicted to salad?!)

Store-bought dressings alienate me because of everything from their long list of unpronounceable ingredients to the so-so taste and oftentimes high sugar content — but not the Toasted Thai Coconut Vinaigrette. Acid League’s products are made using simple (and simply delicious!), premium ingredients that steal the flavor show. The dressing is plant based, gluten free, and unpasteurized, so it also supports gut health. This “living vinaigrette” mixes cider vinegar and extra virgin olive oil with yummy additions like toasted coconut flakes, garlic, ginger, and rosemary extract. It’s everything I am looking for (convenient and absolutely delicious) and nothing I’m not (excess sugar and preservatives).

And while I love that this magic tonic has me eating plenty of salads, I’ve also been using it for everything from marinating shrimp and chicken to drizzling over roasted veggies or a grain bowl. It’s so versatile that I find myself thinking of ways to add it to every meal. Believe me, from now on, it’ll always have a spot in my pantry — and on my salad.
