A Strong Case for Putting Nectarines on Your Pizza

The concept of putting salad on pizza infuriates some pizza purists, but I think it’s ingenious. Instead of having a salad on the side, you eschew the traditional red sauce and mozzarella and throw your entire salad right on top of your pizza crust. It’s the best of both worlds.

This particular salad features caramelized onions, goat cheese, prosciutto, mixed greens, slivered almonds, balsamic vinegar, and sliced nectarines. While sweet, juicy nectarines are in season, it makes sense to sneak them into as many dishes as possible — including pizza.

And since it’s still summertime, you should absolutely grill both the pizza crust and the nectarine slices. You get to avoid turning on the oven and the smokiness from the grill imparts complexity and depth of flavor to your final product — win-win!
