A Squash Side Dish to Steal the Show at Your Next BBQ

When perusing Pinterest and blogs, I come across and bookmark a lot of great-sounding recipes to make at a later date; some indiscriminate point in the far-off future. And then there are the recipes I know I must make immediately. This grilled balsamic squash with tomatoes and garlic scapes definitely falls into the latter category.

Summer squash, garlic scapes, tomatoes, fresh basil — this dish contains all the best that summer has to offer. It’s the perfect accompaniment to grilled chicken, fish, or burgers. (Although, don’t be surprised if people are more interested in the grilled squash than anything else.)

Start by throwing strips of summer squash (that have been marinated in a balsamic-thyme dressing), halved lemons, and garlic scapes on the grill. Then, toss cherry tomatoes and a handful of fresh herbs with the grilled scapes, and squeeze the grilled lemon over everything for a bright, flavorful salad.
