Q: My boyfriend and I live in different cities about two hours apart, and I'm traveling down to see him on our anniversary. I was hoping to make him dinner, something I could bring with me to work on Friday and with minimal prep serve for dinner Friday night.
I'm working under several constraints: Dinner needs to be made ahead, vegetarian, gluten-free and lactose-free. Can you help me come up with a menu? Or should I throw in the towel and take him out to a restaurant instead?

This plus some soup could be really delicious for a light dinner. And you could bring all the ingredients prepped and roll up sushi together.
