A Protein-Packed Salad to Beat the Lunch Blues

We said goodbye to sad lunches in 2015. This year we’re all about midday meals that bring us joy and energy — meals like this farro salad, with juicy sliced turkey tenderloin, sweet candied chickpeas, and a tangy clementine vinaigrette.

I’m not going to lie — this salad has many different components and requires some extra prep time, but the effort is well worth it.

It has so much going for it — farro, turkey, chickpeas, mixed greens, apple slices, clementine segments, dried cranberries, and feta — that you can’t help but look forward to eating it for lunch every day. What really takes this salad over the edge is the clementine vinaigrette, which perfectly straddles the line between tart and sweet.
