A Post-Thanksgiving Meal Plan: Savory Muffins, Chicken Stew & Grain Salad

I don’t know about you, but the Monday following Thanksgiving is when my holiday leftovers usually run out. I’m ready for a nourishing meal that doesn’t involve turkey or sweet potatoes, and if you can relate, here’s a menu to get you started on your cooking this week.

For breakfast: a savory muffin that you can grab and go. For lunch a wintery grain salad with figs and onions. For dinner: go to town on vegetables with garlicky broccoli and a chicken stew with kale and beans that yields lovely leftovers. Fill out your lunchbox and snacks with seasonal clementines and any lingering leftovers and you’re set for the week.
