Let’s face it — cheesecake is a pain to make. From carefully wrapping your springform pan in foil so no water seeps in, to pre-baking the crust, to crossing your fingers the top of the cake doesn’t end up cracking, baking a cheesecake often feels like more effort than it’s worth.

When you don’t have time or energy to commit to making a real cheesecake, try a no-bake version. Same crispy crust, same creamy center — just with way less of a headache.

This no-bake cheesecake is a riff on red velvet cake. You layer sweetened whipped cream cheese — dyed red velvet’s signature color — on top of buttery chocolate sandwich cookie crumbs, and let the whole thing chill in the fridge until ready to serve.
