A Big Bowl of Soba Noodles Always Does the Trick

Before it gets too warm out, let’s roast bunch of vegetables and throw them on some spicy soba noodles. The mushrooms are topped with a tamari-honey glaze and then roasted in the oven. There’s also a ton of greens (broccolini! kale!) in this recipe for good measure. New favorite lunch recipe, anyone?

I especially love eating soba for leftover lunches. It’s a nice alternative to standard grain salads, but it really don’t take any extra work. Besides the mushrooms, the rest of the meal comes together rather quickly when prepped.
