A Bacon-Blue Cheese Dip So Good, You’ll Want to Eat It with a Spoon
Summer is the easiest time to entertain. When it’s warm out and everyone is just happy to just be outside, with a cold drink in hand, you can get away with setting out an assortment of easy dishes. A caprese salad, slices of crusty baguette, a bowl of fresh berries — you’re all set.
Some sort of dip with potato chips is also always a hit. This one, with caramelized onions, crispy bacon, and funky blue cheese, would be a welcome sight at any summer shindig.
There are a lot of complex flavors in this dip, which is nice, considering how rich most sour cream-based dips can be. You first caramelize red onions, then toss them with some balsamic vinegar for a little sweetness and bite. Next, combine the caramelized onions with sour cream, blue cheese, crumbled bacon, fresh rosemary, and a little garlic powder.
Set this dip out in a bowl, garnish with sliced scallions, and watch your guests flip out over it.
