If you can’t get enough of elote during the summer, this is the side dish you need in your life. Inspired by the cheesy Mexican street corn with a kick, this version calls in creamy feta to get the job done.

Why This 5-Minute Side Deserves a Spot on Your Table

Skip the salt and season your veggies with a big handful of salty cheese instead. Sweet corn meets its match when it’s tossed with crumbled feta and gets some added heat from a pinch of chile flakes.

With simple sides, like this one, that include just three ingredients, remember that quality counts. Instead of the regular feta you use to toss with your salad, splurge for a super-creamy chunk of French or Bulgarian feta at the cheese counter.

How to Make It

Microwave a 12-ounce bag of frozen corn, according to the package instructions, until just cooked through. Immediately toss with about 1/2 cup of crumbled feta and 1 teaspoon of chile flakes. Squeeze over lime juice before serving.
