5 Slow-Cooker Breakfast Kits to Make and Freeze

These are the kits you prep and package now to save time later. The real beauty of these slow-cooker breakfast kits is their versatility. With a standard template, it’s easy to mix and match ingredients to make your favorite variation.

A Slow-Cooker Breakfast Kit Template

There’s no set recipe, but rather a basic template to help you bring these kits together. The template calls for standard components, not including the eggs, which get added fresh when you’re ready to cook. Below is the basic formula we used in our cooking lesson on preparing these, but we’re also sharing it here with a few more ideas for combinations to try.

The formula: 2 cups carbs + 8 ounces protein + 1 1/2 cups cheese + 6 ounces veggies

  • Carbs: Start with about 2 cups of carbs, like cubed bread, diced, or shredded potatoes.
  • Protein: In addition to eggs, include a protein source to make breakfast more fillings. Add about 8 ounces of protein, and if meat is on the menu, be sure it’s fully cooked first. Our favorite protein choices are crumbled sausage, diced ham, bacon, and beans.
  • Cheese: Add about 1 1/2 cups of shredded cheese. Stick with cheese varieties that melt well, like cheddar, Monterey jack, and Gruyère.
  • Veggies: Include about 6 ounces of veggies. Stick with one veggie, or use a blend of a couple favorites. We’re partial to veggies with a lower water content, like onions, peppers, and spinach.

1. The Classic
{Bread + Sausage + Cheddar + Red Bell Pepper}

If the sausage, egg, and cheese is your go-to breakfast sandwich, this breakfast kit has your name all over it. It’s loaded with diced bread, crumbled breakfast sausage, shredded cheddar, and a mixture of diced onion and red bell pepper.

2. The Quiche Lorraine
{Potato + Ham + Gruyère + Spinach}

This play on the classic quiche Lorraine combines shredded potatoes with diced ham, grated Gruyère, and baby spinach. While you can certainly shred the potatoes, we love leaning on the freezer shortcut of using purchased shredded hash browns.

3. The Unwrapped Breakfast Burrito
{Potato + Chorizo + Monterey Jack + Onion}

Inspired by my favorite make-ahead breakfast burritos, this is the casserole that will give your morning a kick. Start with diced potatoes (cut your own or use frozen cut potatoes), along with crumbled of spiced, cooked chorizo, grated Monterey Jack cheese, and diced onion.

4. Light and Hearty
{Sweet Potato + Ground Turkey + Swiss + Spinach}

This is the breakfast kit that brings you a bit of a lighter egg casserole, with a blend of fresh-cut or frozen diced sweet potato, cooked ground turkey, grated Swiss cheese, and baby spinach.

5. Huevos Rancheros
{Potato + Black Beans + Cheddar + Red Onion}

Loosely inspired by huevos rancheros, this flavorful casserole combines fresh or frozen shredded potato, drained and rinsed black beans, grated cheddar cheese, and red onion. Just before serving, top with cooked casserole with salsa and fresh cilantro.
