Ina Garten makes the best brownies. And the airiest pavlovas. And the most amazing sweets in general. Seriously, we’ll follow any dessert recipe she’s got. Which is why we really wanted to know what makes her list for must-have baking gear.

If you’re an Ina fan, then you know she doesn’t like to waste any time. So of course, Ina loves her KitchenAid stand mixer, which allows her to handle other tasks while her batter, dough, or frosting gets mixed (versus having to babysit a handheld mixer).

What other key baking items does Ina have? Definitely a French rolling pin. Ina says it really allows her to feel the dough while she’s working with it.

Another important item (especially if you have, say, apple pie bars and a pumpkin flan baking at the same time) is a timer. Actually, make that timers — as in more than one. Ina keeps three on her stove to alert her when each of her concoctions might be ready. When cooking and baking a handful of things, you really have to keep track of them all and this really is the best way. Grab a set of timers and never forget anything in the oven again. Plus, you’ll keep your cell phone goop-free.

A timer we love: Kikkerland Copper Timer, $20

Ina also relies on a digital scale to make sure there are no discrepancies when she needs an exact measurement of a certain ingredient like flour or chocolate chips.

Our suggestion: Escali Primo Digital Scale, $25

Speaking of chocolate, Ina’s favorite cocoa powder is a dark and rich cocoa powder from Italy — Pernigotti Cocoa, which is made by company that’s been around since 1860. Use this cocoa in any of your favorite recipes that call for it, or try it in Ina’s irresistible dark chocolate terrine.

Ina’s favorite: Pernigotti Cocoa, $23 for 12 ounces at Williams-Sonoma
