We turned on our heat for the first time last week. I generally like to try and hold off until the latest possible day in the season, when I can no longer tolerate chilly feet in the early mornings or evenings. There are many things I'm not overly frugal with, but utilities (and heat in particular) are something I watch like a hawk. The good news? On these crisp fall evenings, heat or no heat, mac and cheese pretty much always hits the spot.
I've made a few different mac and cheese recipes in the past few weeks and we had a killer acorn squash mac and cheese at a little lunch spot in Portland last weekend. In addition, my good friends just released their first cookbook, a collection of recipes from Homeroom, their fantastic Oakland-based Mac and Cheese restaurant.

So suffice it to say, it seems the creamy, hearty comfort food is having a moment right now and I'm happy to be along for the ride. For cool nights when I'm too far away to visit Homeroom in person, here are a few recipes I've turned to recently or am looking forward to baking this fall.
