When you have a hectic week on your calendar, do you properly batten down the hatches when it comes to meal plans or do you let your planning go a little awry? Our calendar this week includes the return of spring soccer, dentist and doctor appointments, and the looming tax deadline.
Rather than give up completely on meal planning, I'm front-loading our week with three easy dinners prepared in the slow cooker with the goal of leftovers to feed us for a few lunches and maybe a scrappy dinner or two later in the week. Here's how the slow cooker is my savior for another busy week.

Monday: Slow Cooker Potato Leek Soup
Starting the week strong with this big-batch soup means that I can eat it for lunch a few days this week. Buy a bunch of small Yukon gold potatoes for this soup and you can use the rest of them for Wednesday's dinner. I'm serving these with some freezer biscuits from my stash.
Tuesday: Slow Cooker Chicken Burrito Bowls
We're obsessed with this easy take on Taco Tuesday. If you've never made this recipe before, be prepared for leftovers for lunch the next day and make sure you have extra chips and salsa on hand for scooping the saucy rice mixture.
Wednesday: Buttery Slow Cooker Chicken & Potatoes
This new-to-me easy-fancy slow cooker dinner is well-suited to mid-week entertaining, but we're just counting on the leftovers for tomorrow night's dinner. I'm making quick sautéed green beans when we get home from soccer as a side.
Thursday: Chicken Curry in a Hurry
Those leftover chicken thighs and buttery potatoes from last night are headed for a curry bath — ditto any leftover green beans, frozen vegetables, or anything in the crisper drawer. Serve this curry with store-bought bread or naan.
Friday: Muffin Tin Pizza Bombs
Admittedly, I'm pulling these pizza bombs from the freezer or ordering delivery for this week's pizza Friday because despite the busy week, I've managed to feed us with ease from the slow cooker and I'd rather catch up with my family than worry about fresh pizza dough.
