Next Week's Meal Plan: 5 New Dinners to Cook Before Summer Ends

The back-to-school sales have already begun, and at least a few states in the South will be starting the school year this coming week. I'm trying to soak up the last long days of summer before my oldest becomes a first grader in just a few weeks.

This week is all about summer dinners that make the most of in-season produce while keeping cooking time minimal so that we can get back into our regular routine before summer ends and school starts.

I believe meal planning is the secret to stress-free weeknight dinners. Since I'm frequently asked by friends and family what I'm cooking for dinner each week, I share my weekly meal plan here. Monday: BBQ Ranch Chicken Bites

I love that I can prep these skewers on Sunday and pop them in the oven or on the grill on Monday evening. We'll be serving these with Instant Pot corn on the cob and a simple green salad.

Tuesday: Sheet Pan Shrimp Tacos

Have you ever pan-roasted shrimp before? It is so easy and the results are super-juicy. These tacos can be made even easier by skipping the slaw recipe for your favorite bagged version from the produce department.

Wednesday: Greek Chicken Grain Bowls

Prep these bowls alongside the chicken skewers on Sunday and you'll only need to assemble them on Wednesday night. The best part is that you don't even need to heat anything, as these bowls are just as delicious cold as they are warm.

Thursday: Light & Fresh Slow Cooker Corn Chowder

Corn is so good and inexpensive right now that a big batch of slow cooker corn chowder just makes sense — though you can start with frozen corn, too. Eat some tonight for dinner and freeze the rest for a September night when you need a quick dinner.

Friday: Grilled Pesto Chicken Flatbreads

I'll probably skip the chicken on these flatbreads and double up on the veggies, with leftover chopped tomatoes and red onion from Wednesday's grain bowls. These grilled flatbreads are built on naan bread that can be picked up at the grocery store instead of making pizza dough.
