Noodles made out of vegetables? Is it something better left on Pinterest, or an incredible meal waiting to happen? Well, I’m about to find out. I just bought a spiralizer for my boyfriend’s birthday (his request) and we’ve been on the lookout for fun, veggie-laden recipes to try out. I’ve got my eye on these four “pasta” dishes.
First on my list is that avocado-basil zucchini noodle with shrimp. There are still a few lingering zucchini at my farmers market, so I’ll be sure to snatch them up for dinner this weekend.
