30-Minute Monday Meal: Sheet Pan Chicken & Veggies
Need something quick and delicious for dinner tonight? Sheet pan meals to the rescue again! This one — with chicken, veggies, and a flavorful “stir-fry” sauce — definitely doesn’t disappoint.
Now, there’s something to be said for actually stir-frying in a hot wok, but this recipe allows you to put all your ingredients on one sheet pan, place it in the oven to bake, and walk away. It doesn’t get much easier than that!
Simply marinate pieces of chicken breast in a mixture of soy sauce, rice wine vinegar, olive oil, oyster sauce, black pepper, garlic powder, sesame oil, and ground ginger before adding them to a sheet pan along with chopped vegetables. The author uses asparagus, broccoli, Brussels sprouts, bell pepper, and red onion, but you can use whatever you have on hand. Everything bakes together for about 15 minutes or so, or until the chicken is cooked through.
Serve with some brown rice or cauliflower “rice” and watch your family happily devour this healthy, satisfying meal.
