A cup of flour that’s scooped out of a canister versus a cup of flour that’s spooned into a measuring cup will not yield the same amount of flour. And that can be the difference between a perfect or a collapsed soufflé. If you are a stickler for accuracy, you may rather bake with 200 grams of granulated sugar instead of 1 cup.

2. You can use it to get serious about coffee.

For similar reasons, serious coffee drinkers measure their grounds by weight. There are special coffee scales, but this one has precise graduations of 0.05 ounce (1 gram), so it’s a great place to start (although many coffee experts prefer one that measures down to a half gram).
