I love the power of simplicity. Just like how some of the best songs only use three chords, I love when a recipe calls for just three ingredients. No frills, no fuss — just a quick prep and cook time stands between you and that first delicious bite.

Over the past year, I have been adding simple recipes to my collection that really come in handy when I am in a time crunch. It’s for this very reason I was excited to come across this 3-Ingredient Cake from Jocelyn at Grandbaby Cakes. And as it turns out, it’s also gluten-free!

Inspired by a recipe she learned from Soqueta Experiences in Mallorca, Spain, Jocelyn’s cake can be prepared in just five simple steps. You’ll start by preheating your oven to 350°F, then grab six eggs, separating the yolks from the egg whites. Beat the whites until stiff peaks form and set aside. In a separate bowl, beat the yolks and two cups of sugar until light. Then, add what Jocelyn notes to be the secret ingredient — potato starch — before beating until combined and folding in the egg whites. Bake for about 25 minutes, dust with powdered sugar, and serve!

And that’s it! A super-speedy, easy dessert to enjoy yourself or bring to your next potluck.

If this cake happened to catch your attention like it did mine, and you are looking for some more delicious kitchen inspiration, these griddle cakes are just the right amount of fluffy and perfect for breakfast. And if dessert is what you still crave, check out this light and fluffy peach upside-down cake, which has a very fast prep time, so you’ll be enjoying your first bite before you know it.
