Inspired by a recipe she learned from Soqueta Experiences in Mallorca, Spain, Jocelyn’s cake can be prepared in just five simple steps. You’ll start by preheating your oven to 350°F, then grab six eggs, separating the yolks from the egg whites. Beat the whites until stiff peaks form and set aside. In a separate bowl, beat the yolks and two cups of sugar until light. Then, add what Jocelyn notes to be the secret ingredient — potato starch — before beating until combined and folding in the egg whites. Bake for about 25 minutes, dust with powdered sugar, and serve!
