The pantry is where all great dinners begin — and that’s especially been the case in most recent days. And by stocking yours with a few very easy, everyday ingredients, you can use yours to create dishes way more creative than you ever thought possible.

Cozy Pantry Dinner #1: One-Pot Sausage, Pepper, and Onion Pasta

If you have yet to experience that magic that is one-pot pasta, let this recipe be your introduction. Instead of cooking the pasta separately in a pot of boiling water, it’s simmered in chicken broth with delicious goodness like sausage and peppers. One-pot pasta gives you a more flavor-packed dinner and leaves you with less to clean up.

The equation: 2 medium bell peppers + 1/2 medium red onion + 12 ounces fully cooked hot or sweet Italian chicken sausage + 12 ounces penne pasta + 1 (32-ounce) carton Swanson® Chicken Broth + 1 cup grated Parmesan

Cut 2 medium bell peppers and 1/2 medium red onion into 1-inch chunks. Slice 12 ounces fully cooked hot or sweet Italian chicken sausage into 1/2-inch pieces. Combine 12 ounces dried penne pasta, bell peppers, red onion, sausage, 2 tablespoons olive oil, and 1 (32-ounce) carton Swanson® Chicken Broth in a large straight-sided skillet. Bring to a boil over high heat. Boil mixture, stirring frequently to prevent sticking, until pasta is al dente and almost all of the liquid is absorbed, 8 to 9 minutes. Toss with 1 cup grated Parmesan cheese. Taste and season with kosher salt and freshly ground black pepper as needed. Serve garnished with chopped fresh basil and additional grated Parmesan, if desired.

If You Can’t Find…

  • A red onion, try a yellow or white onion.
  • Dried penne pasta, try dried ziti.
  • Grated Parmesan cheese, try grated Pecorino Romano cheese.

Cozy Pantry Dinner #2: Chicken Congee

Congee is an incredibly creamy and comforting savory rice porridge. It requires a bit of time on the stove to allow for the white rice to cook, but it’s 100% worth the wait — especially because simmering the rice in chicken broth bolsters its flavor. Top the porridge off with umami-rich soy sauce and crunchy peanuts, then grab a spoon and dig in.

The equation: 1/4 cup roasted, unsalted peanuts + 1 cup long grain white rice + 1 (1-inch) piece fresh ginger + 6 cups Swanson® Chicken Broth (1 1/2 [32-ounce] cartons) + 1 cup shredded chicken + 4 teaspoons soy sauce

Coarsely chop 1/4 cup roasted, unsalted peanuts. Place 1 cup long grain white rice in a strainer and rinse well under cool water. Peel and grate or mince 1 (1-inch) piece fresh ginger. Combine the rice, ginger, and 6 cups Swanson® Chicken Broth (1 1/2 [32-ounce] cartons) in the saucepan. Bring the mixture to a boil, then reduce heat to a simmer. Cook, stirring occasionally, until the mixture is thickened and creamy, about 30 minutes. Stir in 1 cup shredded chicken. Taste and season with kosher salt and freshly ground black pepper as needed. Transfer to individual bowls and divide 4 teaspoons soy sauce and chopped peanuts over the top of each. Serve garnished with sliced scallions, if desired.

  • Fresh ginger, try 1/4 teaspoon ground ginger.
  • Soy sauce, try tamari.

Cozy Pantry Dinner #3: Avgolemono

This traditional Greek chicken soup is thickened with egg rather than cream, brightened with fresh lemon juice, and made especially easy thanks to Swanson® Chicken Broth. It’s plenty rich and satiating, yet still feels light at the same time.

The equation: 1 small yellow onion + 1 (32-ounce) carton Swanson® Chicken Broth + 1/2 cup dried orzo + 4 large eggs + juice of 1 lemon + 1 cup shredded chicken

Dice 1 small yellow onion. Heat 1 tablespoon olive oil in a large pot over medium heat until shimmering. Add the onion and sauté until softened and translucent, 3 to 5 minutes. Pour in 1 (32-ounce) carton Swanson® Chicken Broth and bring to a boil. Stir in 1/2 cup dried orzo and cook, stirring occasionally, until the orzo is al dente, 7 to 9 minutes. Remove soup from heat. In a medium bowl, beat 4 large eggs and whisk in the juice of 1 lemon. One ladle at a time, whisk hot soup slowly into egg mixture to temper the eggs and allow them to heat without curdling. After adding 3 or 4 ladles, pour warm egg mixture into the soup pot. Stir in 1 cup shredded chicken. Return to low heat and cook, stirring frequently, until soup has thickened slightly but has not come to a boil. Taste and season with kosher salt and freshly ground black pepper as needed. Serve garnished with chopped fresh dill, if desired.
