The equation: 8 dry lasagna noodles + 1/2 cup baby spinach + 1 (9.75-ounce) can Swanson® Premium White Chunk Chicken Breast + 1 cup shredded mozzarella cheese + 1 cup Alfredo sauce + 1/4 cup grated Parmesan cheese
Heat oven to 350°F. Bring a large pot of salted water to a boil. Add 8 dry lasagna noodles and cook, stirring frequently to prevent sticking, until just shy of al dente, about 4 minutes. Transfer to a clean towel and lay flat to dry and cool. Coarsely chop 1/2 cup baby spinach and place in a bowl. Drain 1 (9.75-ounce) can Swanson® Premium White Chunk Chicken Breast and add to bowl, along with 1 cup shredded mozzarella cheese. Break up any large chunks of chicken and stir to combine. Divide the mixture among the lasagna noodles and spread into an even layer. Starting from a short end, roll up the noodles into a tight roll. Place the roll-ups seam-side down, side by side, and touching in a greased baking dish. Pour 1 cup Alfredo sauce over the roll-ups and sprinkle 1/4 cup grated Parmesan cheese over the top. Heat oven to 350°F. Melt 3 tablespoons unsalted butter in a large cast iron or other oven-proof skillet over medium heat. Add 1/4 cup all-purpose flour and whisk until fragrant, 1 to 2 minutes. Slowly whisk in 1 1/2 cups whole or 2% milk. Switch to a wooden spoon and continue cooking, stirring constantly, until the gravy has thickened and coats the back of the spoon, 2 to 3 minutes. Remove from heat. Drain 1 (9.75-ounce) can Swanson® Premium White Chunk Chicken Breast and add to the skillet along with 1/2 teaspoon smoked paprika; stir to combine. Heat oven to 400°F. Drain 1 (9.75-ounce) can Swanson® Premium White Chunk Chicken Breast and 1 (15-ounce) can black beans and place in a medium bowl. Add 1 cup shredded Mexican cheese and stir to combine. Pour half of 1 (15-ounce) can enchilada sauce into the bottom of a baking dish. Using 8 (8-inch) flour tortillas and working with one tortilla at a time, fill each with about 1/2 cup of the filling, roll tightly to close, and place seam-side down in a single layer in the baking dish.
