15 Soups, Sandwiches & Salads to Satisfy You and Your Lunchbox
Above all else, lunch should be satisfying. If it’s not a meal that can get us through an afternoon of work, then it’s not doing its job. Here are 15 of our proven recipes that won’t leave your stomach rumbling an hour later — our favorite spicy lentil wraps, a bowl of creamy broccoli and cheddar soup, a chopped salad tossed with quinoa and avocado, and many more great meals to pack up and take to work.
The foe of a good lunch is usually time. I do my best to plan ahead and make a big batch of soup or prep salad fixings for the week ahead. This is when I pull up the recipes for things like our Black Bean Soup, Roast Pork Sandwiches or those Spicy Lentil Wraps. But if time escaped me and I’m scrambling for lunch, Crisp-Tuna Cabbage Salad Sandwiches it is! The Taco Salad and Cold Noodle Salad are also good lunches to throw together last minute.
Feel like you need to round out a lunch with something more substantial? A simple egg, soft-boiled or hard-boiled, on a salad is my favorite way to make a pile of leafy greens feel more filling. A piece of toast or a scoop of grains also goes a surprisingly long way toward making a basic soup into a bigger meal. I’m also a “just in case” kind of luncher, so I usually pack some fruit, a handful of nuts, or some other little nosh into my bag — if I need it, it’s there; if not, it’s a snack for later.
