12 Crunchy Spring Salads from Saveur
With spring in the air, salads are on our collective brain. There aren’t too many fresh green things in the garden yet, though, so we’ll have to wait a little longer for our chive blossoms and baby arugula. But there are other good things to eat, like winter citrus, fresh spring radishes, and fennel. Saveur has a great slideshow of a dozen crunchy spring salads that make use of these things and more.
Here are two favorite salads from the slideshow:
• Fennel, Sunchoke, and Apple Salad – This is like a greatest hits collection of winter and early spring salad staples: sunchokes (Jerusalem artichokes), apples, fennel, radishes, and lemon juice. Incredibly crispy, sweet, sour, and a little bitter too. Looks very refreshing.
• Orange and Radish Salad – This is a very simple and slightly unusual salad with gorgeous color. It’s just orange slices, shredded radish, a little mint, and a sprinkle of orange flower water in the citrus dressing. Beautiful!
