10 Easy Ways to Stuff a Pita Pocket
A piece of pita bread is a little world unto itself — so round, so hollow, so open to whatever you desire for lunch. And so portable and convenient, too!
But after a few too many of my old standby, kale salad-stuffed pockets, I decided I needed a little fresh inspiration for the daily marvel of the pita sandwich. The Kitchn editors put our heads together to cook up some of our favorite flavor combos — all easy, all requiring a bare trio or so of ingredients, all able to be whipped up in a flash, and all perfectly stuffable. Pita pockets, here we come.
1. The Apple & Goat Cheese
A modern ploughman’s lunch.
Spinach + sliced apples + goat cheese + dried cranberries.
2. The Eggplant Special
Summer at its finest.
Sautéed or grilled eggplant slices + roasted red peppers (from a jar) + slices of fresh mozzarella.
3. The Chickpea Express
Chickpeas are endlessly satisfying.
Chickpeas (tossed with a little olive oil and chopped tomato) + baby kale + feta.
4. The BLT
Exactly what it sounds like.
Mixed greens + sliced cherry tomatoes + cooked bacon strips.
5. Sassy Eggs
Breakfast or lunch — you decide.
Scrambled eggs + pico de gallo (or this Lazy Salsa).
6. Strawberry Balsamic
A little sweet, a little savory.
Spinach + sliced strawberries + goat cheese + balsamic vinegar.

Leftover carnitas, steak, or anything meaty is the ticket here.
