Eating vegetables for breakfast makes me feel like I really started the day on the right foot — and it's actually easier than you might think to work veggies into the first meal of the day. No matter what produce you have on hand, there's a recipe for you. From make-ahead egg bakes and vegan chickpea pitas, to smoothies and a salad made for the morning, here are 10 veggie-packed breakfasts to add to your meal plan.

1. Summer Breakfast Salad

This mix of baby spinach, creamy avocado, quinoa, blueberries, eggs, and crispy bacon is what made me a believer in the breakfast salad. It's both refreshing and a little bit indulgent, and I know it will keep me full all morning.

2. The Easiest Cheese and Vegetable Frittata

Keep a veggie frittata on regular rotation in your breakfast lineup and you won't be sorry. Throw it together with any veggies you have hanging out in the fridge. If you don't have time to cook in the morning, it can also be made the night before; it's just as tasty cold as it is warm.

These breakfast sweet potatoes are just one reason I bake a big batch of sweet potatoes before heading into the week. Reheat them if you like, then split them open and they're a blank canvas to be filled with toppings like yogurt, granola, fresh fruit, or eggs.
