Take a look at any of my weekly meal plans and you’re likely to find a sheet pan dinner on there. It’s one of the easiest ways I know to get a veggie-packed dinner on the table. From pasta to grain bowls, so many dinnertime favorites can be cooked on a single baking sheet. I especially love recipes that lean on vegetables and beans, which get nice and crispy-delicious when roasted. While the recipes below call for specific veggies, almost anything you have in the crisper will work.
