Ready for fall? To us, it's a season that means deliciously creamy, nutty butternut squash (and other winter squash varieties too, of course). Here are 10 of our favorite ways to enjoy a butternut squash — from soup to nuts, with recipes too!

1. Orzo with Butternut Squash, Spinach, and Blue Cheese

Tossed together while warm, the blue cheese softens just enough to coat the orzo and vegetables.

2. Butternut Squash and Parmesan Dip

This is my go-to appetizer through fall and winter. It doesn't take much to turn basic butternut squash purée into a creamy dip that's a total crowd-pleaser.

3. Couscous Salad with Butternut Squash and Cranberries

This simple fall salad is just as wonderful eaten cold as it is served warm as a side dish at a potluck, or even as part of your Thanksgiving spread.

4. Butternut Squash Fettuccine Alfredo

This is a definite step up from the classic. Once roasted and puréed, butternut squash makes the creamiest and silkiest pasta sauce.

5. Quick Butternut Squash Curry

Good news — this Thai curry can be whipped up in less time than it takes to call for takeout, so put the phone down and get in the kitchen.

6. Roasted Butternut Squash Purée with Goat Cheese

I often serve this as an alternative to mashed potatoes. The creaminess can't be beat and goat cheese is just tangy enough to make this basic purée taste a little fancy.

7. Butternut Squash and Pecorino Tart with Crispy Shallots

Frozen puff pastry is the trick that makes this fast-and-fancy appetizer a breeze to pull together.

8. Southwestern Butternut Squash Soup

When in doubt, soup is always the answer! Top off this warm, smoky-scented version with a dollop of Greek yogurt and a flurry of fresh cilantro. Tortilla chips are always a good idea for serving, too.

9. Vegan Amaranth Bowl with Garam Masala Butternut Squash

Warm, spiced garam masala is a natural partner for this sweet winter squash. If you flavor your squash with cinnamon, this is the upgrade for you.

10. Butternut Squash Rose Tart

This stunner is the dish for when you want to go all out. And best of all, it's easier than it looks to pull off.
