10 Picnic-Ready Salads to Eat Outside
Food just tastes better outside, doesn’t it? The first hint of warmer weather and you’ll find us outside come mealtimes: on a porch, on a front stoop, on a park bench, wherever we can find a sunny spot to sit back and enjoy a meal al fresco. With Memorial Day next week, we feel the outdoor eating season is officially open. Here are ten of our favorite seasonal salads to pack up and take on a picnic.
Many of these salads are meals on their own — a light dinner as we transition from spring into summer. The salad of whole wheat israeli couscous filled with dried cherries and spicy arugula pictured above sounds so good right now. I’d also recommend trying the quinoa salad with grilled halloumi sooner rather than later. It never fails to hit the spot.
For a salad to go with a full picnic spread, definitely make the asparagus ribbon salad before this spring veggie is gone. It’s so simple — just six ingredients! — but so good. The fennel slaw would also be perfect with some first-of-the-season pulled pork sandwiches.
And if you can’t wait for summer one more second, the BLT Salad with Bacon Vinaigrette is just what you need. Make it with sweet cherry tomatoes now and then sub in those heirlooms once the season takes off.
