Zucchini is in season right now and it's such a versatile vegetable. It can be used in so many other ways besides the ones we grew up thinking about — savory italian dishes. Due to the fact that it holds flavors so well; it can be dressed up or down and made sweet or savory.
If you are looking to take a somewhat traditional route; shave ribbons of zucchini into a green salad. The ribbons will add great texture and absorb the amazing flavors of the dressing. To make a traditional meal slightly less traditional; use zucchini in place of dough for pizza! Not only will you be cutting out a great deal of calories; it's an easy and fun way to get the kids to eat their veggies.
Be daring and make some zucchini cupcakes — I know, sounds weird but they're actually quite delicious. For easy finger foods, bake up some zucchini chips (I'm actually serving these at my upcoming bridal shower!).

I have never liked zucchini and summer squash - they had a kind of texture that I didn't like. But since I've gotten a mandoline and discovered the zucchini ribbon, I think I'm in love!
I have the say that the original cucumber recipe by Tyler Florence that the crudo is modeled after is really the best. I tried it with a similar approach with zucchini, and it just didn't have the same great result. Might be worth going a little crazy and using both zucchini AND cucumber together.

I loooove zucchini! My favorite is to slice it thin (like 1/4"), brush with olive oil, salt, fresh pepper, and grill. So easy, and goes with anything for a side dish.
Oh, and the zucchini pizza looks really, really weird. Moosewood has a recipe for zucchini crusted pizza, though, which is divine :)

Raw zucchini noodles are another delicious way to make them. There are tons of great raw noodles online, including for sun-dried tomato sauce and nut-based alfredo sauces.

zucchini pancakes are a great savory snack! Just mix grated zucchini with some milk and flour until it's the consistency of a good pancake batter. Season with salt and pepper and pan fry! YUM!
(probably everyone does this but) i made this the other night: start with about a cup of spaghetti sauce, slice one zucchini, one yellow squash, red & green pepper, throw in some carrot & mushroom, fresh basil, rosemary, garlic, etc., and simmer until the veggies are cooked, but still crisp. serve over (brown) rice or pasta. easy, filling, and hardly any calories.
