As the weather warms up and outdoor entertaining season approaches, it's good to have some easy, crowd-pleasing recipes in your back pocket. This two-ingredient mango pudding definitely fits the bill. Cool and creamy, this is the simple dessert or snack I'll be turning to over the next few months.
The pudding gets it thick consistency from chilled coconut cream, so this dessert does require a bit of forethought. My solution? I always keep a couple cans of full-fat coconut milk in the fridge. Then I just skim the solidified cream off the top and reserve the water for smoothies.
The author also notes that you want to use fresh champagne mangoes here instead of frozen ones. Luckily these mangos, also called Ataulfo or honey mango, are in season right now.
Then all you have to do is blend or process these two ingredients (along with a little salt) until smooth. You garnish the pudding with some more fresh diced mango and a drizzle of mint simple syrup. That simple syrup is the refreshing, sweet touch that really just gilds the lily on an otherwise perfect treat.
