Something truly magical happens when a hard-boiled egg spends a couple weeks in some salty brine. Not only does the pickling liquid — apple cider vinegar, water, sugar, salt, and turmeric — give the eggs a tangy bite, but it also lends a gorgeous yellow hue to the exterior.
This recipe is basically a two-for-one deal, as you also pickle sliced onion (or shallot) along with the eggs. Once the eggs are ready, you can halve them and garnish with some chopped pickled onions, or use the onions on anything from tacos to salads.
