When summer rolls around, watermelon should be in pretty much everything. Slushies, ice pops, salads, sangria — all benefit from the addition of this refreshing fruit. So it comes as no surprise that I fully endorse this watermelon salsa. With jicama, red onion, cilantro, and lime, it's just the thing you need to elevate your Taco Tuesday plans.
All you have to do is combine diced watermelon, jicama, jalapeño, cilantro, red onion, lime juice and zest, and salt together in a large bowl. This is also one recipe that benefits from a little make-ahead action, as the ingredients can chill and mingle together in the fridge to create a more flavorful salsa.
Paired with some tortilla chips or carnitas tacos, this salsa will definitely earn a spot in your summer recipe rotation.
