With summer on its way — and many air conditioners already busily humming in windows — it's time to say goodbye to warm soups and stews. Don't worry, though — this cucumber-radish-avocado gazpacho means you can have your soup and eat it too. (Even when it's hot as blazes out.)

This gazpacho — or cold soup made with raw vegetables — is a riff on traditional tomato-based gazpacho. It features a few unconventional ingredients, namely avocado, radish, and pine nuts.

I think it's pure genius. Refreshing, beautiful, and flavorful — what more could you ask for in a summertime soup?
