With autumn officially underway, there's a crisp coolness in the air that calls for a little warming up in the kitchen. One way to add a cozy, comforting touch to the everyday: toast your grains!Be it millet, oats, rice, barley... toasting adds such depth of flavor to whatever dish in which you're using the grain. Toast a bunch ahead of time and store it in an airtight container. Then cook the grains as normal in whatever dishes you typically use them.
Preheat oven to 350 degrees.
Spread washed grains evenly on a baking sheet.
Toast in the oven for 12-15 minutes, until they give off a warm, nutty aroma.
Grains can also be skillet-toasted. Just add grains to a hot pan on medium heat and stir constantly until they give off a nutty aroma.
We've been enjoying toasted short-grain brown rice for breakfast not that the mornings are chilly. They cook up creamy and are delicious with fruit and yogurt stirred in.
