If you only drink tomato juice while at 30,000 feet, you're not alone. Turns out there's a scientific reason why tomato juice tastes better on a plane.
According to Charles Spence, a researcher and professor of experimental psychology at Oxford, your tastebuds can be distracted by loud background noise. That "distraction" makes both salty and sweet flavors taste less potent. It doesn't, however, affect umami flavors, which are prevalent in tomato juice.
