Q: What is the best way to store cheese? I've been storing mine in the plastic it came in, sometimes using Saran wrap to it keep it airtight. Perhaps because I don't go through it all that fast, I'm finding that the edges of the cheese are often rubbery and inedible. I hate to waste it! Any tips?

The key is to preserve it from the odors of the fridge while still allowing the cheese to breathe. Also, it's quite normal to have to slice off rubbery or stale edges of your cheese from time to time, especially if you don't eat it quickly.

My answer to everything in the kitchen is Pyrex!
I find cheese sort of "breathes" and exudes moisture -- maybe it's more like transpiration of a plant?
I find if I put it in a glass or plastic storage container naked, it gets sodden.
My solution? I wrap it in waxed paper -- really, old-fashioned waxed paper! -- and then seal it in a Rubbermaid container.
I wrap cheese in waxed paper, like @MDorothy, and then just put it in one of those sandwich baggies (the kind with the fold-top, not the zipper). The cheese gets to breathe, but doesn't dry out. If it's a soft, squishy cheese, I'll put it in a little tiny lidded Pyrex.
I've been known to use parchment paper, then storing it a baggy or other sealable container. But recently I asked this question to a cheesemonger and they suggested using this.
i wrap mine in parchment and put it in a tupperware container. the parchment soaks up any extra moisture and keeps cheese fresh for a while!
I was once gifted that Cheese Is Alive wrap paper (linked in Foodlovah's post above) and I have to say it noticeably extended my cheese's life...I don't go through cheese very quickly, either. You can probably approximate the wrap with two layers of wax and parchment, though. Although I did love having the opportunity to say to myself "Cheese is ALIVE..." everytime I used it. Also, I cut up the large squares they give you to make it last longer....
Yep, same suggestion as above - invest in the cheese paper! If you don't go through a lot of cheese, just one of those little packets of cheese paper will last you a few months.
Agreed! Formaticum Cheese Paper (and now Cheese Bags!) are the tried and true way to extend the life of your cheese.
