Inspired by the harvest-inspired Thanksgiving menu from The Kitchn's Gathering this week, I want to talk about the side dish glory that is whole roasted (or grilled!) carrots. Gone are the days of mushy, small carrots of your childhood lunch box. Whole roasted carrots with lots of spice or sauce make for a beautiful addition to any dinner table, especially on Thanksgiving.
