I love white beans! I cook them, proabably, at least once a week. I have to admit I used canned, most days - I like the tiny white beans from goya. Your dishes look delicious!
I also like them in pies, like a white bean, spinach and roasted mushroom pie with a pecan crust

I've made soup with beans, yams and kale...but this is brilliant! So much easier and quicker to make! Need to go buy some kale then I'm all set for dinner!
I like white chili with white beans and white corn (spicy with some chili powder, cumin, and cayenne pepper). I just sub extra beans for the chicken in white chicken chili recipes that I've found online. Comes out great. If you're not vegan, tastes great with some monterey jack cheese on top, freshly shredded. Can add extra veggies to make it a whole meal.
