In case you haven't noticed, it's Egg Week around here! We've shown you how to tell if your eggs are good, some of our favorite egg recipes, and how to poach an egg — and it's only Tuesday. Before we roll on, though, it's your turn: What's your very favorite way to eat an egg? Poached on avocado toast? Fried with bacon? Baked in a casserole? Beaten into a soufflé or meringue? Boiled? Steamed? Give us your eggy best!
Me, I love extra, extra buttery and creamy scrambled eggs on a piece of crisp toast. It's the perfect comfort food, any time of day.

Fried over easy, with a side of toast and jam, and some bacon and hashbrowns wouldn't hurt either.

3 minute poached egg with a beet, sweet and red potato hash with three drops of truffle oil. ..yummy
Soft boiled, 6 minutes. I ate it for breakfast nearly every day on my trip in Europe.
I also like it easy, sunny side up over a bed of fried rice.
I make a lot of frittatas, but my absolute favorite recipe right now is soft-baked eggs with greens, garlicky yogurt, and spiced butter from Ottolenghi's Plenty cookbook.
My favourite way is rather English; poached and served on lightly buttered toast and eaten with a knife and fork.
My favorite is definitely poached, over greens, with a buttery hollandaise sauce oozing over it. Also, does "with bacon" count as an answer?!

Grilled prosciutto-wrapped asparagus, topped with a poached egg and a few slivers of Parmesan, all on top of creamy polenta. Mmmmm
Soft boiled, in an egg cup, with toast. Where someone other than me has removed the shell leaving the egg, no shards. I haven't had that since I was a kid (because of the shell shard issue).

Who can pick just one? Sometimes I'm in the mood for a runny, poached egg while other times a creamy scramble with cheese and avocado or an airy souffle is my preferred choice. I love it all!
Medium cooked over white rice or medium cooked on an English muffin. I also enjoy egg salad with avocado instead of mayo!
hard boiled with salt, standing over the sink. Or poached over polenta, or baked with gruyere and cream with toast soldiers. Yum.

Ha a week of egg posts and eggs are one of the few foods I gag to think of eating. I LOVE to cook eggs for others (poached or what we call pancake egg are my favorite to make) but I'd rather eat a handful of dirt than have to eat a bite of any eggs. Closest I can do is meringue or souffle. Do those count?
It's a toss-up between hard poached and cheesy scrambled eggs with tomatoes and spring onions. Either way, buttery multigrain bread is a must. Now I'm hungry!

Shakshuka or soft boiled, squashed and salted between two slices of buttered bread.
Fried over easy with a nice runny yolk, sprinkled with salt and pepper and a few dashes of tabasco and some buttery white toast to dip in the yolk.
Pirate's Eye AKA Egg in a Basket. My Mom always called them pirates eyes, which I think is way cooler than Egg in a Basket. However, I will eat eggs in any way shape or form...my favorite thing.
Fried sunny side up (not poached!), on eggs benedict
Scrambled, on a bagel and topped with bacon or smoked salmon
Egg in a hole (thanks mom and dad!), over easy on top of just about anything (burger, salad, as the "meat" of a sandwich), as an omelet with leftovers bits from the fridge, baked in a dish of tomato sauce or roasted vegetables...I could eat eggs every day for breakfast, lunch, or dinner.
One of my recent favorite treats though are these baked eggs in tortilla cups. The eggs cover a spoonful or two of beans, and then get topped with cheese, salsa, or avocado. So, so good.
soft boiled (3.5 minutes), over a nicely toasted and buttered whole wheat bread, with a small drop of good, spicy dijon mustard and course salt and pepper
Poached in heavy cream!!! My dad used to make this when we lived on the farm and had access to good thick cream. I do this maybe once or twice a year in his memory and honor. Delicious with hearty whole wheat toast, butter and jam. Otherwise it is eggs any way you want to serve them.

Yesterday, I made some polenta with mushroom broth, butter, and parmesan and ate it with a poached egg and some chopped parsley. Delish!
Sunny side over thinly sliced grilled zucchini all on top of hearty buttered wheat bread.
I'm not entirely sure that this question can be answered, because eggs are delicious no matter what you do with them, but I think the way I cook eggs most often is to make an omelet with Holland chiles, served over brown jasmine rice with sweet soy sauce.
Basted, on sourdough, with bacon on the side.
A fried egg with the yolk solid is my favorite. I can't eat a runny yolk without gagging.
Poached or over medium with buttered toast!
I love my yolks runny but runny whites gross me out. :X
Eggplant omelet with ketchup. There's something about the smoky scent of grilled eggplant that just makes this omelet taste so good.
I also love it when you fry an egg and the whites go all crispy on the edges. Yummy!
Like jmorri26, my favortie way is NO WAY! The Kitchn and I are quite syncronized as you guys chose to start a special egg week (one of the very few things I really don't like to eat) just when I decided to start watching my weight a little bit. So no tempting tasty dishes on this website for me this week, it helps keeping the good resolutions! :)

My favorite is a fried egg sandwich on a homemade sage biscuit, but I also love a quiche with any leftovers in the fridge thrown in or a yummy mushroom and spinach bread pudding. As long as it involves cheese, I'll eat any kind of egg...
