People can get fierce about their food preferences. Perhaps you only take whole milk in your coffee or like a very specific ratio of filling to crust in your pies. Maybe you have a particular number of deli meat slices you like on your sandwiches. And some of you, I've come to learn, are very particular about your tomato sauces.
For such a simple affair, people are vocal about their tomato sauce. Maybe yours is a family recipe or maybe you stumbled upon it in a food magazine years ago and have relied on that recipe alone ever since. My favorite tomato sauce recipe is almost not a recipe at all: I simply roast a huge batch of tomatoes and garlic and puree with a little salt, pepper, and olive oil. I make large batches in the summer when tomatoes are at their peak and freeze it in small batches to pull out in the dead of winter. That's what I'm up to this week. How about you? For a simple, no-cook sauce, I like this Triple Tomato Sauce from Food & Wine that uses fresh tomatoes, sundried tomatoes and tomato paste with basil, garlic and olive oil.

My favorite is the one I make in the summer to freeze and stockpile for the winter. Roma tomatoes, cut up and roasted with chopped garlic, onions, oregano, salt and pepper. I don't even bother to puree it as I prefer my sauce on the chunky side.
I have many tomato sauces that I like depending on what I'm making. However, The New Laurel's Kitchen has an especially good basic sauce with tomato, shredded carrot, chopped green peppers and a lovely mix of herbs.

I don't use a formal recipe for mine. Just canned chopped tomatoes, dried oregano and basil, one onion, garlic, olive oil, a little red wine and lots of dried red chili peppers. I make it about once a week as it is my husband's favorite thing I make!
I make a simple roasted sauce too, always gets rave reviews.
