Personally, I adore grilled eggplant, like these slices topped with goat cheese and tomato. I also love grilled zucchini, straight from the garden.
But if I'm grilling meat, then inexpensive, tasty chicken thighs are where it's at. They are so tender and juicy!

My favorite thing to grill is salmon, but I'm a B.C. girl so I practically live off the stuff.
squash, peppers, and onions, marinated in balsamic. Yum!
I enjoy making Fajitas, Alton Brown style.

But I love doing anything on the grill, really - meats, vegetables, fruits, and unconventional type things like baking and pizzas sound like so much fun, but I've never tried it.
I love grilling! Fire-roasted peppers of all kinds are my favorite thing to grill -- they work great in salads, stuffed with rice and beans, blended into salsas, added to hummus, or served simply, peeled and de-seeded, then dressed with olive oil, red wine vinegar, salt, and pepper. But if I had to choose, grilled sweet corn-on-the-cob with lots of butter is something I look forward to every summer.
My new favorite is grilled pizza. Also doing more grilled veggies and some fruit. If the weather would cooperate, I'd grill every meal!
Anything wrapped in bacon is good.

Anything and everything: from burgers and dogs and corn on the cob to leg of lamb, asparagus and peaches for desert. Everything tastes better grilled.
I love grilling! Grilled zucchini is my go to dish these days and we fired up the grill last night for some corn on the cob. I am so excited summer is here!
Sunday is our hamburger day....I love making flank steak with either a marinade or a rub on it. Lovely. Zucchini on the grill can't be beat either. We have done pizzas too...they're fun; but I think they taste as good from the oven.
Tandoori chicken. Works great on a grill!
I've got a few good cheap options (I love cheap when I have to pay to feed a crowd).
Mussels (with beer to steam open, any sauce you like)
Pineapple, brown suggar and butter skewers (served with ice cream).
Zucchini (courgettess, tossed with a little balsamic and oil)
Portobello mushrooms
I always hated corn done on the grill. I find them chewy and unpalatable. That is, until I learned to do them by opening them, removing the silk, then closing them again. They are amazing done this way.
A whole fish wrapped in foil with aromatics is also fabulous on the grill.
Sweetbreads!! curious why no one has mentioned this one earlier.
Tofu and pretty much any vegetable. Our current favorite is mini sweet peppers; we just toss them in olive oil, sea salt, and pepper and skewer them for grilling. Then eat them as is, with our fingers, of course!
Probably kofta kebabs, though I don't get around to making them quite as often as I'd like.
Steak and chicken wings!
Grilled Pineapple seasoned with a little cinnamon. The best!
I like grilling tofu, paneer and veggies in a tandoori marinade that i mix with yogurt. so good!
Grilled potato slices or wedges are something simple and amazing that often are not thought of!

Ribs, baby backs don't have to be cooked low and slow. Get a medium to medium hot grill season with salt and pepper and grill over direct heat turning and basting often with a mix of 1/2 apple cider vinegar and half water. They take about 45 minutes and you can tell they are done when the meat starts to pull back from the bone. Baste one last time and sprinkle generously with your favorite dry rub.
