I've been noticing vegetables, beans, and seeds taking the place of meat and pasta in interesting and often sneaky ways. Some of these are great (pasta made out of carrots) and some of them are a little annoying (cauliflower pizza crust). The latest thing I'm seeing? Lots of meatless meatballs made out of things like mushrooms, black beans, broccoli, and cauliflower.
Meatless meatballs seem to go along with the comfort food trend where meatballs with real meat reign supreme. Bloggers and recipe developers alike are pushing this comfort food thing further by adding lots of trendy vegetables.
Whether the rise of meatless meatballs is a health-related thing or just a vegetables-are-simply-delicious kinda thing is inconsequential.
