So, I have a recent and serious falafel obsession. I have tried a few different recipes, searching for the most perfect one.
Here's my question: Falafel recipes go back and forth between using cooked chickpeas and soaked, uncooked chickpeas. Why? What's the difference? Is there a nutritional difference?

Amanda, I am far from a falafel expert so I'll turn this over to the readers. How do you make your falafel? How do you prepare your chickpeas? What sort of differences do you note between the two methods?
