What's the Best Way to Prepare Chickpeas for Falafel?

Q:  So, I have a recent and serious falafel obsession. I have tried a few different recipes, searching for the most perfect one.

Here's my question: Falafel recipes go back and forth between using cooked chickpeas and soaked, uncooked chickpeas. Why? What's the difference? Is there a nutritional difference?
